Enoki Mushroom

Wash the enoki mushrooms, remove the roots, and blanch for 5 minutes after boiling.

Control dry and put it in a vegetable mixing bowl.

Use 1 spoon of oil, 1 spoon of light soy sauce, half a spoon of vinegar, a little sugar and salt to make a sauce.

Chop white scallion and garlic, shred carrots, and cut chives into sections.

Heat oil in a pan, turn on a low heat, add the chopped green onion and garlic and sauté until fragrant.

Add carrot shreds.

Pour the sauce and stir fry.

If the soup is not enough, add some boiling water or boiling enoki mushroom water.

Pour the fried seasoning sauce on the enoki mushrooms.

Let cool, pour a spoonful of sesame oil, add coriander and mix well.
