Enoki Mushroom and Mixed Vegetable Pot

Prepare the ingredients: a piece of tofu, an appropriate amount of enoki mushroom, and an appropriate amount of baby cabbage.

Wash the tofu and cut into small pieces for later use. Remove the roots of the enoki mushrooms, clean them for later use, clean the baby cabbage and cut them into sections for later use, and wash one garlic stem and cut into small pieces.

Put an appropriate amount of peanut oil in a hot pan, add minced garlic and fry until fragrant. Add tofu and fry it slightly. Place it on the side of the pan. Add baby cabbage and stir-fry. When baby cabbage becomes soft, add a little salt and stir well.

Prepare a clay pot, put the stir-fried vegetables in the clay pot, add appropriate amount of hot water, and turn to a medium heat to boil for ten minutes.

After the vegetables have been boiled for ten minutes, add enoki mushrooms and boil for another eight minutes.

When the enoki mushrooms are cooked, add some light soy sauce, oyster sauce and a little pepper to taste.
