Enoki Mushrooms Mixed with Fragrant Dried

Cut off the roots of enoki mushrooms and rinse them.

Cut the dried tofu into 1cm wide strips.

Remove the leaves of celery, wash and cut into 4cm-long pieces.

After the water in the pot is boiled, add the enoki mushrooms and blanch them for 2 minutes, then add the celery and blanch them for about 10 seconds, then remove them together, and then drain them thoroughly after submerging in cold water.

Put enoki mushrooms, celery, and dried tofu in a container, sprinkle with salt, sugar, vinegar and light soy sauce and mix well.

Heat the pot and pour it into the oil to heat it up. When the oil is 50% hot, add the peppercorns and stir up the aroma, then pour the oil into the mixed vegetables immediately, mix well and serve.
