Family Kitchen Fritters

Put plain flour into the basin.

Beat in the eggs and add salt.

Youtiao leavening agent (available in supermarkets).

Add water and mix into dough.

Twenty minutes after Fufa, knead it for another five to ten minutes to get some oil on your hands.

Wrap it in plastic wrap, put it in the refrigerator, and leave it for twelve hours.

Grease the chopping board, take out the dough, press it into a one-centimeter thick pi, and brush the surface with a layer of oil.

Cut evenly into 3 cm wide strips.

Stack every two pieces together and press them with chopsticks.

Add oil to the pot, heat to 80% heat, pinch both ends of the fried dough stick pi and gently pull it into the oil.

Change to medium heat and turn over with chopsticks.

Fry until golden on both sides, and cook with castor oil.

Put it on the plate and serve.

Tips:
You can use baking powder and baking soda instead of you tiao leavening agent. The hair-fat time must be long enough, and don't knead the dough before frying, in case it is too hard to lose hair. During the frying process, the oil temperature should not be too high, just keep 80% hot.
