Family Version Salt-baked Seafood (applicable to Crab, Abalone, Snails and Shrimp)
1.
I bought this kind of coarse sea salt for salt baking. Of course, you can choose other options, but you must choose coarse salt!
2.
A proper amount of cinnamon, star anise, bay leaves, and peppercorns, wash and set aside
3.
Saute the spices and ginger slices in a dry pan until fragrant.
4.
Add coarse salt, stir fry over low heat, turn off the heat after heating, and simmer to let the spices taste. If you don’t like spices, just use coarse salt.
5.
Wash the abalone and drain the water.
6.
After the crabs are slaughtered, wash them and crack the crab claws and crab cover slightly. (It can’t be cracked too big, otherwise it will be very salty!)
7.
Put part of the sea salt that has been heated to a high temperature into the pot (I use the electric Mofei multi-function pot, in fact, it can also be made directly in the wok, I just want to take pictures later to have a better appearance, hahaha), Probably tiled on the bottom layer will do.
8.
The crabs are spread flat on the salt.
9.
Cover the crab with the remaining salt and cover the pot. Heat to high temperature for 10 minutes, then switch to medium-low temperature for 30-35 minutes. Time depends on the size of the crab to judge for yourself. My crab is about 300-400g.
If you use a wok, just heat the salt directly and turn on the gas stove to bake for 20-30 minutes.
10.
Add abalone on the way to the crabs. First put the abalone meat side down and touch the coarse salt.
11.
Turn over and continue to bake after about 15 minutes, and the temperature should follow the temperature of the crab. Because it will be salty to face down for too long.
12.
The total time for abalone is about 20-25 minutes.
Then, delicious out of the pot!
13.
Do the same with other seafood! Put the hardest thing to cook first, and then gradually add it to the pot according to the time required for other seafood.
It is better to "hide" crabs and shrimps with sea salt, but not snails and abalones, otherwise they will be very salty!
