Fermented Pig's Trotters

Chop the trotters, blanch them in cold water, put a few slices of ginger in the water, cook for five minutes after the water is boiled, remove and rinse.
Put the pig's trotter into an electric pressure cooker, add the water that has just covered the trotter, add a few slices of ginger, 4 cloves of garlic, a spoonful of pepper, a spoonful of cooking wine, two spoons of light soy sauce, and a spoonful of dark soy sauce.

Then add four spoons of fermented rice, 10 crystal sugar, two teaspoons of salt, and electric pressure cooker for 20 minutes.

After the pressure cooker is naturally deflated for 20 minutes, pour the soup and pig's feet into the wok together. It is best to use a non-stick pan and collect the juice on high heat. You can taste the saltiness and decide whether to add salt or not. I didn’t add anything here. .
Use high heat until the soup thickens.
Tips:
Pressure cooker for 20 minutes, the texture of the pig's feet is springy and chewy. If you like the soft texture without bones, add another 10 minutes to the pressure cooker.
