Fermented Pork Trotters

After the trotters are cleaned, blanch them in a pot under cold water. Add ginger and cooking wine when blanching them.

The blanched trotters are rinsed with cold water.

Crush 3 pieces of red fermented bean curd, add 3 tablespoons of fermented bean curd juice and mix well. Cut green onion into sections and slice ginger

Put a little oil in the pan, add the trotters and fry until slightly yellow.

Add scallion, ginger, dried chili and stir fry for a fragrance.

Pour the fermented bean curd juice and stir fry evenly.

Transfer the trotters to an electric pressure cooker, add the boiling water that has just covered the trotters, then add one star anise, one slice of cinnamon, a few rock sugar, and two tablespoons of soy sauce. Close the lid and select the tendon option.

After the pressure cooker is exhausted, pour the trotters and soup into the pot, and add appropriate amount of salt according to the taste.

Just collect the soup on high heat.
Tips:
1. If there are unshaved hairs on the trotters, please remove them with tweezers after blanching them. Pig hair is very easy to remove at this time.
2. Because each brand of fermented bean curd has different saltiness, please choose the amount according to your own situation.
3. If you don't have a pressure cooker, you can directly use a wok to simmer on low heat for about an hour and a half.
4. Adding proper amount of soy sauce can make the color more beautiful.
