Take a handful of enoki mushrooms and remove the roots.

Put it in a basin and wash.

Bring water to a boil in the pot, add enoki mushrooms and slightly hot.

Immediately remove it in cold water and take a shower.

Add 2 grams of vinegar to the bowl and about 5 grams of light soy sauce.

Adjust the amount of salt into juice, and set aside the chili oil.

Put the cold enoki mushrooms on the plate, and pour the sauce onto the enoki mushrooms.

Tips:
When the enoki mushroom is hot, it must be short and put in cold water quickly, otherwise it won't have a crispy taste.
