Remove the roots of enoki mushrooms and clean them.

Put water in a pot to boil, add a little salt and salad oil, add enoki mushrooms, and blanch.

Rinse the blanched enoki mushrooms with cold water and drain the water.

Put Chinese pepper, aniseed, bay leaves, Pixian watercress, Chaotian pepper sauce, garlic in the pot (if you don't like the garlic flavor, you can leave it alone, I didn't put it).

Add more salad oil and cook slowly until the red oil comes out.

Put sugar, salt, and monosodium glutamate into the flushed enoki mushrooms and stir evenly.

Pour the boiled red oil on the enoki mushrooms and mix well. Remember to just use red oil.
