Flower Beetle Powder

Add water and a little salt to the sixties, let it stand for 1 hour, and let it slowly spit out the sand.

Soak the vermicelli in cold boiled water and wash the enoki mushrooms for later use.

Shell cooked quail eggs for later use.

Chop garlic cloves and small peppers.

Put the sixties into the pot, add minced garlic, minced chili, sprinkle in cooking wine, oil, light soy sauce, vinegar, sugar, and boil.

After the water boils, add the vermicelli, enoki mushrooms, and quail eggs, cover and cook for 2 minutes.

Turn off the heat and start the pan, drizzle with sesame oil, sprinkle with coriander, chopped green onion, and pepper and stir well before eating.
Tips:
1. No salt was added because light soy sauce was added during cooking. If the taste is weak, you can add some salt appropriately
2. If you don’t like coriander, you don’t need to add it. Chili and vinegar can be adjusted according to your preference.
3. Although it is flower beetle powder, if you can't buy flower beetle, you can use other shellfish such as clams.
