Four Flavor Pork Belly Soup

One pork belly. When we choose pork belly, choose a smaller one instead of an all white one, which may be bleached; choose a slightly pink one.

The pork belly you bought will be dirty. We need to clean up, and the best helper is this: flour.
Scoop 4 tablespoons of flour, we can use expired flour, just for cleaning.

First of all, we have to scrape the pork belly with yellow marks on the outer layer with a knife. This is the most bacteria. Then turn the pork belly over and rinse the inside several times. Next, let's scoop the flour and put two spoons in it. Now it is the inside of the pork belly. Let's scrub it with our hands to make sure that every part of the pork belly is scrubbed. After this step, the pork belly will be washed very clean. Not much time is used. The skillful use of flour and salt is a necessary condition for washing pork belly.

Cut an appropriate amount of ginger slices, put the pork belly into the pot, pour in the water that has not covered the pork belly, add the ginger slices and cooking wine. Turn off the heat after boiling the water for 5 minutes.
