Fragrant and Soft Glutinous---soya Bean Braised Pork Tail

Shave and clean the young hair of pigtails, cut into sections, and blanch them in a pot of boiling water for 2 minutes to remove.

Heat a proper amount of oil in a pot on the fire, sauté the shallots, ginger slices, star anise, bay leaves, and dried chilies.

Pour the pigtails into the pot, cook the cooking wine, add rock sugar, light soy sauce, dark soy sauce, and stir-fry evenly.

Pour some hot water over the pig's tail and bring it to a boil.

Transfer to a clay pot and simmer for 1 hour over low heat.
6.
Add soybeans and salt, and continue to simmer for 15 minutes.
7.
Turn the soup to high heat and it can be out of the pot.
