Fragrant and Soft Homemade Pancakes
1.
The ingredients needed for pancakes are very simple, as long as there are flour, oil, and salt. Those who like to eat green onion pancakes can also prepare some chives for better taste. There is no ordinary flour at home. I usually use ordinary flour. This time I mixed 300 grams of high-gluten flour + 200 grams of low-gluten flour. Add water to the flour and knead it into a soft and smooth dough. Cover the lid and let it sit for 30 minutes.
2.
If you like to eat green onion cakes, prepare a little chives while the dough is soaking, wash and chop them. Take out the awake dough without kneading. If the chopping board is big enough, just roll it out into a large rectangular dough sheet. If the chopping board is too small, divide the dough into pieces and roll them out one by one.
3.
Sprinkle a thin layer of edible salt on the surface of the dough, spread it as evenly as possible, and then use a small brush to apply a layer of edible oil, just a thin layer of cooking oil, not too much. If you don't have a small brush, you can use the surrounding patches to apply back and forth in the middle, as long as you apply the oil and salt evenly.
4.
Roll up from one side and divide them into evenly sized doses. The size of the doses should be adjusted according to the size of your own pot. Try to be as even as possible. I divided them into five.
5.
Take out one of the pancakes and roll them into a uniformly thick pancake. The thickness is about 3-5ml. This is a key to whether the pancake is soft enough. The pancake should not be too thin. If it is too thin, it will lose too much moisture, and it will be hard and soft. The electric baking pan is plugged in to preheat. After the pan is hot, use a brush to brush a thin layer of cooking oil, put the cake in carefully, and brush the surface with a layer of cooking oil, not too much, so that the surface can be evenly spread. All right. It is healthier to make pancakes by ourselves, with as little oil and salt as possible. If there is no electric baking pan, you can replace it with a thick-bottomed pan. The heat should be controlled well. It should not be too low. If the fire is too low, it will last longer. If too much water is lost, the pancakes will be dry and hard. The pancakes will be soft enough with medium and small fire.
6.
Cover the electric baking pan and heat it up. When you see hot air coming out of the electric baking pan, open the lid and turn it over. At this time, you can see that the surface of the cake is dry and there is no oil, so brush it thinly. The layer can also be applied evenly.
7.
Put the lid on, after 2 minutes, open the lid and the pancakes are ready. The baking time of home-cooked pancakes should not be too long, the pancakes will become hard after a long time, and they will be cooked after turning over two sides. Look at this golden golden color, is it very appetizing? If you like pancakes, do you want to eat it right away?
8.
You see, this pancake is less oily and soft, so it can be rolled into a ball and held in your hand. Homemade pancakes are as simple as that, with less oil and healthier. Unlike the pancakes in a pancake shop, they are directly "splashed" with oil drums. It really looks like money-free. Think about it, this money-free oil... What kind of oil is it? Do you dare to buy again?
9.
The pancakes left in the refrigerator overnight are still so soft. There are so many layers of homemade pancakes, they are delicious when you look at them, and they don’t need hot water or blanching. They are so soft that they can be rolled into a ball.
Tips:
1. Roll the dough sheet should not be too thin, not only without layers, but also easy to dry and hard due to water evaporation. 2. The pancake time should not be too long, just turn over two sides, don't turn back and forth, the pancake will become hard if it takes too long. It's not that more oil is soft, and it's also soft if you don't put oil when you burn it with less oil.
