This dish is an improved version of a French classic dish made from black pork ribs raised in the wild. The stew makes the most of the meat flavor. Potatoes that have been stewed for a long time absorb the umami flavor of the broth and gravy. Although the whole dish is simple, it is very delicious, and it is very suitable for home cooking.

This dish has high requirements for the main ingredient, spare ribs, and the free-range black pork is firm, fragrant and delicious, which accomplishes this task well.

French Braised Pork Ribs with Potatoes

1. Preheat the oven to 120°C. Spread the ribs with your hands, cut the potatoes into thick slices, and slice the shallots into thin slices.

2. The broth is boiled.

3. Stir-fry shallots with butter on low heat until tender.

4. Put potatoes in a cast iron pan, then put the shallots, sprinkle with thyme, pour the broth, and bake for 15 minutes in the oven.

5. Fry the ribs in a hot pan until golden brown.

6. Take out the cast iron pan, place the ribs, cover, bake for 45 minutes, add salt and black pepper to taste.

Tips:

1 To achieve better results, take out the ribs and warm them to room temperature one hour before cooking.
2 Pork ribs can be replaced with meat from other parts.
3 The potatoes will be simmered more crisply, so cut them into thick slices.
