French Braised Pork Ribs with Potatoes

Preheat the oven to 120°C. Spread the ribs with your hands, cut the potatoes into thick slices, and slice the shallots into thin slices.

The broth is boiled.

Stir-fry shallots with butter on low heat until tender.

Put potatoes in a cast iron pan, then put the shallots, sprinkle with thyme, pour the broth, and bake for 15 minutes in the oven.

Fry the ribs in a hot pan until golden brown.

Take out the cast iron pan, place the ribs, cover, bake for 45 minutes, add salt and black pepper to taste.
Tips:
1 To achieve better results, take out the ribs and warm them to room temperature one hour before cooking.
2 Pork ribs can be replaced with meat from other parts.
3 The potatoes will be simmered more crisply, so cut them into thick slices.
