French Fries

Peel and wash potatoes.

Cut into suitable thick strips.

Soak in light salt water for 10 minutes.

Boil water in a pot, add the soaked French fries, and add a tablespoon of vinegar.
Blanch it in water, and generally boil it for 1 minute to cut it off.

Then remove and drain the water.

Put it in a food bag, put it in the refrigerator, and freeze it through.

When eating, take it out in advance, and naturally thaw and soften at room temperature.

Put oil in a pot, heat to 50% heat, put in the thawed French fries, and fry on medium heat.

Fry until the French fries are firm, remove them.
10.
Increase the temperature of the oil and heat it to 70% hot, add French fries and fry again.
11.
Fry until the fries are colored, and remove them.
Serve with tomato sauce
Tips:
1. Don't cook the French fries thoroughly when it is blanched, just cut off the raw fries.
2. Adding vinegar makes the french fries firm.
