French Fries

Peel the potatoes. Cut into medium-sized strips.

Soak the cut potato chips in cold water and wash.

Put water in the pot, add the potato chips after the water is boiled, cook for about 3 minutes, remove and control the moisture, and then use a kitchen paper towel to absorb the moisture on the surface.

Sprinkle some starch evenly so that the potato strips are evenly coated with a thin layer of starch. Put it in the refrigerator for 24 hours.

Before frying, take some starch out of the refrigerator, so that it will be more crispy. This is also the key step for the crispness of the French fries. Put an appropriate amount of oil in the pan, add the French fries when the oil is 40% hot, fry on a low heat, don't turn it, and slowly turn it to medium heat after setting, and turn it constantly.
