French Vegetable Savory Pie
1.
Find a large bowl, mix low-gluten flour, 5 grams of granulated sugar, and 1 gram of salt, then put the cut into small pieces of butter into it, and knead it with your hands.
2.
Then pour an egg yolk and 6 grams of cold water, continue to knead and knead, knead into a dough
3.
Wrap the dough in a fresh-keeping bag and put it in the refrigerator for an hour to relax
4.
Take out the refrigerated dough, sprinkle a little bit of low flour on the chopping board to prevent stickiness, then roll it into a dough about 0.3 cm thick
5.
Cover the dough on an 8-inch pie pan, use your hands to make the dough tightly fit the pie pan, and then use a rolling pin to roll out the excess dough
6.
This is what it looks like when it is rolled. Whether the pie crust looks good or not has a lot to do with the meticulous handwork
7.
Then poke some small holes on the surface of the pie crust with a fork, and put a clean stone on it. This is to prevent the crust from bulging during baking. Then put it in the middle of the preheated 190 degree oven and bake it for about 15 minutes. I don’t have it at home. Pressed stone, so I just poke some small holes in the surface of the dough with a fork and bake it
8.
Take out the baked pie crust, apply a layer of egg coating liquid on the surface, then put it in the middle of the oven and bake at 190 degrees for 2-3 minutes, take it out and set aside for later use
9.
Let’s start making the stuffing. Chop potatoes, broccoli, onions and carrots. Put a small amount of oil in the pan, then pour the chopped vegetables and fry them. Season with salt and black pepper.
10.
Start to make the sauce, after breaking an egg, add plain yogurt
11.
Add whipped cream and stir
12.
Finally add a little salt and black pepper to taste and mix well
13.
Pour the stuffing made in step 9 onto the 8-inch pie slice and spread out
14.
Then pour the sauce made in step 11
15.
Sprinkle a layer of grated mozzarella cheese on the surface
16.
Preheat the oven to 180 degrees, then bake on a low fire for 30 minutes on the middle layer
Tips:
1. This 8-inch French savory pie is very suitable for two people to eat for lunch or dinner, with a cup of juice or fragrant coffee, it can be described as an endless aftertaste of French cuisine;
2. The pie crust must be baked before it has a crispy texture. After baking, give it enough time to cool down;
3. Apply a layer of egg coating liquid to the pie crust and bake it, also to make it more crispy;
4. If you like something richer in taste, you can also add ham sausage or bacon slices and other meat as fillings. I use freshly ground black pepper, which tastes more delicious.
