Fresh Soaked Chicken Feet
1.
After the chicken feet are cleaned, cut off your nails, blanch the water in a pot under cold water, add cooking wine and white vinegar, wait for the dirty things to be cooked, turn off the heat, and wash the chicken feet!
2.
Cut the chicken feet into two halves from the middle, add the chives, ginger and salt, and cook for about 10 minutes.
3.
Take it out and cool it with cold water or ice water.
4.
Boil water with spices such as San Nai, star anise, bay leaves, boil, remove the spices, add salt, chicken essence, and sugar and cool.
5.
Cut carrots, lettuce heads, onions, and celery into sections, add salt and wait for the water to flow out, squeeze the water and set aside.
6.
Add chicken feet and side dishes in the spice water, Chinese pepper, pickled Chinese pepper (you can eat spicy, add more by yourself), and lemon. You can taste the taste of the soup. You can control the saltiness by yourself. Add any condiments if you feel it is lacking. Seal it and refrigerate it overnight!
