Fried and Braised Bigeye

Peel off the skin of the bigeye, clean off the internal organs, and clean it for later use

Sprinkle a layer of salt evenly on both sides of the fish
3.
Heat oil in the pan and spread the fish on the pan
4.
Fry on one side until it turns yellow, then turn it over
5.
Fry both sides and pour in a little boiling water, sprinkle with ginger and garlic

Pour some light soy sauce
7.
Add a little chicken essence
8.
Cover and simmer over medium-low heat for two minutes until the fish is cooked through
9.
Sprinkle a proper amount of coriander into the pot and cut it off
Tips:
1. If you are not in a hurry, the fish can be marinated and fried after being sprinkled with salt to make it more delicious;
2. The fish will be more fragrant if it is fried on both sides and then braised.
