Fried and Braised Crucian Pomfret

Wash and slaughter the crucian carp.

Sprinkle a layer of salt on both sides of the fish.
3.
Heat oil in the pan and pour the fish into the pan.
4.
Fry until one side turns yellow and turn it over.
5.
Sprinkle a layer of ginger on the fish.
6.
Sprinkle a layer of garlic on the fish.
7.
Add a little boiling water.
8.
Drizzle some dark soy sauce.
9.
Add an appropriate amount of cooking wine.
10.
Add a little vinegar.
11.
Cover the pot and simmer for 5 minutes.
12.
Open the lid and cut the shallots into sections.
Tips:
Fry it first and then add water to simmer, the fish will not fall apart so easily.
Add soy sauce to make the color look better.
