Fried Clams with Green Onions

Ready clams

Clean the clams

Add water to the pot and put in the clams

Boil water

Add some cooking wine and salt

Fish out the clams

Cut some ginger garlic shallot

Heat oil in a wok, sauté ginger and garlic until fragrant

Add clams

Add some chili sauce

Stir fry with some soy sauce

Add chives

Continue to stir fry a few more times

Tips:
1. Blanch the clams in water and then fry them, don't cook them too old.
2. Add some cooking wine, green onions and chili sauce and stir-fry for a better taste.
