Fried Cold Noodles

Wash the pot, add oil, green onions, and star anise to fry them over low heat to remove slag.

Chop the white onion, cut the green onion leaves into sections, chop the leek heads, and cut the leek leaves into sections.

Soak the shiitake mushrooms in boiling water and cut them into small pieces.

Add light soy sauce, dark soy sauce, and soaked mushrooms to the noodles and mix well.

Heat the pot and put it in the oily pot, and fry the dried fish until fragrant.

Add shiitake mushrooms, chopped leeks, and chopped green onions to fry until fragrant.

Lay 3 eggs and sauté until fragrant.

Stir fry the noodles and leek leaves.

Add pepper and shiitake mushroom water to sauté the noodles until fragrant.

Finally, drizzle with sesame oil, add green onion leaves and stir well, and serve.
