Fried crispy pork---an ordinary and homely dish, crispy and refreshing, fat but not greasy, is a favorite dish for my husband and I, full of our warm and beautiful memories. We met and fell in love in Chongqing, Sichuan, where we spent a simple and happy college age. A native of Beijing who was born in a water town in the south of the Yangtze River and a native of Beijing has very different eating habits. Fried crispy pork is the first time we have a tacit understanding of a dish. With the material conditions and consumption levels 20 years ago, crispy meat was really delicious enough for us college students, and it became a must-choice dish every time we ate together. Fried Crispy Pork

1. Clean and peel the pork belly.

2. Drain the water and cut into uniform strips.

3. Prepare all the spices and mix the flour with cornstarch.

4. Beat the eggs, add flour and cornstarch and mix well.

5. Add shredded ginger, green onion, thirteen incense, pepper powder, and salt.

6. Add rice wine and stir evenly into a thin paste.

7. Put in the cut meat strips.

8. Stir evenly, when each piece of meat is covered with batter, marinate for 30 minutes.

9. Heat the wok and add vegetable oil. Heat the oil to 70% hot, insert the chopsticks, and the oil is bubbling.

11. Fry until the surface of the meat strips is golden and crispy and fully cooked, then remove the oil to control it.

1. Use flour and eggs to make deep-fried crispy pork into a thin paste without adding water.
