Fried Duck Intestines with Kimchi

Prepare the duck intestines, add cornstarch, cooking wine, salt and vinegar to clean them, and blanch them for later use.

Prepare kimchi, red pepper and green onions.

Cut the chili and kimchi.

Heat oil in a pan and put some peppercorns.

Add ginger and garlic and sauté until fragrant.

Add duck intestines.

Add some soy sauce and cooking wine and stir fry.

Add red pepper.

Add kimchi.

Add some sugar and chicken essence to taste and stir well.

In a bowl, sprinkle with chopped green onions.
Tips:
1. Take care of the duck intestines with patience. You can use small scissors to fry them, rinse them under running water, add flour, vinegar, wine or salt to scrub, and finally blanch the water to remove the odor.
2. Duck intestines are good for stir-frying pickled peppers or braised for eating.
