Fried Dumplings with Eggs

Prepare the ingredients you need. Knead the dough first, add warm water to the flour, stir it into a snowflake shape with chopsticks, then knead it into a smooth dough, cover it with a damp cloth or plastic wrap, and let it sit for 30 minutes to allow the dough to fully absorb the water.

The old leaves and rotten leaves of the leeks are removed, washed twice, and then soaked in salt water for 10 minutes, then removed and rinsed twice with running water, which can remove most of the residual pesticides and insect eggs in the leeks. After controlling the moisture, chop it, clean the fungus, add 2 eggs with cooking wine, add enough edible salt at one time, and stir-fry into a frying pan while pouring into egg pieces. It's best to add enough salt at one time, and no more salt later. This is to prevent the leek from getting out of the soup. Put the leeks, chopped eggs, and chopped fungus together and mix well, add ginger, sesame oil, and chicken powder and mix well. The filling is adjusted.

Take out the dough, knead it into a long strip, round it and cut it into small pieces, and roll it into pieces of dumplings.

Take a dumpling wrapper and put it on your hand, add a proper amount of dumpling stuffing, and make a good-looking dumpling with both hands. The dumplings should be squeezed tightly, check it, and don't let the filling leak out.

After all the dumplings are wrapped, take a flat-bottomed non-stick frying pan. If there is no pan, try to use a pan with a flat bottom. Heat up and pour in a proper amount of cooking oil. Put the dumplings and place them neatly next to each other. Turn to a low fire.

Wait until the bottom of the dumplings, after they are golden brown, pour in a small bowl of water, not too much, it is less than 1/3 of the dumplings, cover the lid, simmer over low heat, and it will be ready for about four or five minutes.

Beat 2 eggs, pour them evenly on the dumplings, cover the pot, and simmer on low heat until the eggs are cooked.

Sprinkle an appropriate amount of black sesame seeds and chopped chives before serving, and serve!
