Fried Dumplings with Eggs

Prepare eggs, cooked black sesame seeds, and washed spring onions

Leftover dumplings for use

Chopped green onion

Take a bowl of salt and beat in the eggs

Put a little oil in the pan and fry the dumplings until the bottom is slightly charred

Pour in the beaten egg liquid (pour in a circle around the edge of the pot)

Sprinkle the chopped green onion while the egg liquid is not solid enough to make it stick to the surface

Sprinkle with cooked black sesame seeds for garnish

Tips:
1. Erniang uses cooked dumplings. If raw dumplings are used, half of the water needs to be added to simmer for a while.
2. When pouring the egg liquid, try to slowly pour it in from the surroundings downwards, with a low heat throughout the process
3. After being out of the pot, sprinkle black or white sesame seeds to make it more attractive
4. It is better to filter the egg liquid for better effect
