Fried Dumplings with Eggs

Chop the sandwich meat into minced meat, add salt, cooking wine, light soy sauce, and oyster sauce, mix well and marinate for 10 minutes. Peel the squash and rub it into silk, rub it with salt, squeeze the water and chop finely, wash and drain the leeks, and chop finely. Put all the ingredients in a deep basin.

Mix the leeks with edible oil to avoid water, and mix all the ingredients into a filling.

Wrap into willow leaf dumplings.

Brush a layer of oil in a non-stick pan and fry the dumplings until the bottom is golden brown.

Pour 1/3 of the height of the dumplings with water, cover and cook.

The fresh earthen duck eggs are still double yellow. Add salt and cooking wine to break up.

When the water is just boiled, pour the egg mixture evenly and sprinkle the chopped green onion.

Cover and simmer until the egg is solidified.
