Fried Dumplings with Hericium and Leek Stuffing

Soak the Hericium erinaceus in cold water, changing the water in due course.

Let the wheat flour and dough stand for 20 minutes.

Put the soaked Hericium erinaceus into a boiling pot and cook for 20 minutes, then remove it to cool, and drain the water.

Pick and wash the leeks, soak them in cold water for 20 minutes, remove and chop them.

Chop Hericium erinaceus, add salt, soy sauce, light soy sauce, pepper, sugar, minced ginger, and sesame oil and stir well.

Chopped leeks and stir-fried Hericium edodes are put together and stirred evenly to make fried dumpling filling.

The rested dough is made into a medium-sized noodle and rolled into a circle to make a fried dumpling wrapper.

Pinch the front and back slices and wrap the dumplings tightly.

Add a little oil in a non-stick pan and fry the dumplings into the pan.

Fry until golden bottom.
