Fried Eggplant with Lotus Root

Wash lotus root, eggplant, green pepper, onion, ginger, garlic, clean.

Wash and slice two eggplants.

Soak it in clean water for anti-oxidation.

Lotus root slices.

Put it in cold water too.

Prepare green onion, ginger, garlic and green pepper.
