Fried Eggs with Fungus
1.
After the fungus is soaked, put it in the pot and cook for 5-8 minutes.
2.
Cut into thin strips, the thinner the better. Red peppers should also be shredded
3.
Lay the eggs and pick out the white embryos (it is said that the children eat very badly)
4.
Mix, add about 5-6 tablespoons of water, and mix well with salt
5.
Big fire, a little oil, after the heat is over 70% to 80%, turn off the heat immediately and pour in the egg mixture
6.
Use chopsticks to tidy up the fungus wire and colored pepper wire to make them as even as possible
7.
It’s always a low fire. This process takes 12-15 minutes. Just start the pot in the middle. The low fire will not make the fungus crackle, and it will also make the omelet more tender.
8.
After basically solidified, turn on medium heat for 1-2 minutes and turn over
9.
Keep on low heat for about 1 minute, then turn it back
10.
Put it on the cutting board and cut into several equal parts
11.
Place the pointed side outwards and sprinkle with chopped coriander
Tips:
Be sure to stick to low fire for a longer time, but low fire will make the omelet more tender
