Zhajiang noodles is one of the most common home-cooked noodles and one of my favorite noodles.
The noodles we are used to are like this. We use the more common bean paste. I have used Yingkou soybean paste before, but after trying many kinds of sauces, my favorite is the soybean paste because the soybean paste does not contain Sweetness. "

Fried Noodles

1. Ingredients are prepared.

2. Cut the pork into small pieces, and grind them together with the ginger in a food processor.

3. Mix the minced meat with seasoning wine and marinate for ten minutes. The minced meat is grainy, so it tastes good.

4. Heat oil in a wok and fry the ground meat under the oil heat.

5. Stir-fry until all the meat changes color. After the moisture in the meat is forced out, it will be dried slightly, and then set aside.

6. Leave the oil in the bottom of the pot and sauté the miso until fragrant.

7. Add appropriate amount of hot water to the sauteed soybean paste, pour the fried ground meat into a simmer, and collect the juice.

8. After the noodles are cooked, blanch the vegetables, place them on the noodles, and pour the sauce on it.

Tips:

There is no need to put salt in the meat, the miso is very salty.
