Fried Noodles

Pour the dark soy sauce and sweet noodle sauce into a large bowl, then add 150 ml of water and slowly mix thoroughly with chopsticks; chop the spring onion into finely minced pieces.

Clean the meat.

Chop the meat into minced meat. I personally think that you should not chop it too much. You can eat granular meat with the best taste. Of course, you can decide according to your own taste.

Cut the tofu skin into shreds, not too thin, it will break if it is too thin.

Cut the green bamboo shoots and carrots into thin strips. I forgot to take pictures of the carrots, and I didn't take pictures of the shredded ones, so I had to use raw materials instead.

Pour more oil into the wok and heat it up. When the oil is hot, add the minced green onion and stir fry for half a minute. Pour in the minced meat and stir-fry until it discolors and grows, and then pour the well-mixed sauce over the lowest heat. Stir slowly for 7, 8 minutes.

Put the chopped green bamboo shoots, carrots, tofu skins and washed mung bean sprouts into boiling water and blanch them to remove. Chop the garlic into minced garlic and set aside.

Boil the water that has been blanched on the dishes, add the noodles to a boil, then remove the noodles with cold boiled water, drain them into a bowl, and finally pour the dishes on the noodles.

Finally, pour in an appropriate amount of fried fried sauce, then pour in a little vinegar and mix well.
Tips:
1. It is best to use half-fat and lean pork for fried fried sauce, and the oil should be slightly more than that for cooking. When the sauce is fried, the sauce will be fragrant only when it is slowly fried on a low heat.
2. Blanching mung bean sprouts should be blanched for 5 seconds after the bamboo shoots are blanched. Don't blanch them too softly. It tastes a bit crunchy.
3. I personally don't like to put vinegar and garlic, so I didn't put it, please feel free to put it!
4. The authentic Zhajang noodles are made by hand, but I was lazy and used some dried noodles. The taste is greatly reduced. Next time, I will roll the noodles by hand, hehe.
5. When preparing the sauce, it is normal to add dry yellow sauce, but I don't have it, so I save it. The taste is also very good. If there is something, it is best to add it.
