Fried Noodles with Egg
1.
Wash and cut a few vegetables. Cut the leeks into sections, the tomatoes into small pieces, and the onions into shreds.
2.
Add the right amount of salt to the eggs, beat and fry them for later use.
3.
Chop the green onion and wash the rape.
4.
Put the noodles in boiling water and cook for about a minute or two, until the noodles have a little hard core, don't cook them. Remove the cold water and control the water for later use. I put a little salt and a few drops of oil in the water for cooking the noodles to prevent stickiness.
5.
Put oil in the pot, fry the chopped green onion, add the onion shreds, and fry until the onion becomes soft.
6.
Add the tomatoes, fry a few times, add the leeks, and stir fry.
7.
Add rapeseed, add noodles, start seasoning, add appropriate amount of salt, light soy sauce, a little dark soy sauce, appropriate amount of oyster sauce, chicken essence, stir fry quickly and evenly.
8.
Finally, put in the scrambled eggs before they are out of the pan, and stir-fry them evenly.
9.
Stir-fry and serve.
Tips:
Noodles cannot be cooked, because they will be fried later, they will become sticky when cooked, which will affect the taste.
