Fried Noodles with Egg and Pork

Boil the noodles in a pot under water, take out the cold water for about a minute after the water is boiled, (the noodles will be too soft for a long time, and the noodles will become battered when fried, so it is good if the noodles are broken) add corn oil and stir evenly to prevent sticking

Add appropriate amount of soy sauce, dark soy sauce, ginger slices, garlic slices, cornstarch to the shredded pork, mix well and marinate

Blanch the cabbage in cold water for later use. Too cold water can keep the cabbage green

Beat and fry the eggs for later use

Shredded carrots

Shred the onion

Leek cut into sections

Stir-fry the shredded pork in a hot pan with cold oil

When the shredded pork changes color, add the shredded carrots and stir-fry until soft, add the oil and appropriate amount of soy sauce, stir-fry well, add the shredded onion and continue to fry for a while

Add mung bean sprouts and stir fry

Add choy sum, eggs, leeks and noodles and continue to stir fry for a while, add appropriate amount of salt and chicken powder, stir fry for a while, turn off the heat
