Fried Noodles with Seasonal Vegetables
1.
Prepare a carrot, wash it, peel it and cut it into pieces (just beat half a carrot in the wall-breaking machine, and cut the remaining half into shreds), put it into the wall-breaking machine, select the carrot program to make carrot juice and filter. Don't throw the filter residue, put it in the pot when you stir-fry the noodles.
2.
Put 1.5 cups of flour in the noodle machine, and add 1.5 cups of carrot juice. Select the automatic program to press the noodles
3.
After pressing the noodles, put them in boiling water and cook them, then remove them in cold water to prevent sticking
4.
Shred the remaining half carrot, cut the cabbage into cubes, and shred the green onions
5.
Put oil in the pan, add green onions when the oil is hot, add carrots and cabbage and stir fry
6.
Then add the noodles and filter residue from the carrot juice, add salt and oyster sauce to taste, and stir-fry evenly before being out of the pot.
Tips:
It’s the season to eat carrots and cabbage. If it’s in other seasons, you can replace it with other vegetables. Adjust the carrot juice to your own taste or replace it with spinach juice. If you have a noodle machine, you can also make the noodles into butterfly noodles, cartoon noodles, etc. Adding eggs when making noodles in other shapes is more nutritious
