Meidou is also called lentil. Every autumn in the north, you can see the green Meidou hanging in the yard and on the wall of rural people's yard, and the yield is relatively high. I always like to eat it with stir-fry, either vegetable stir-fry or meat stir-fry, each has its own advantages in texture and taste. "

Fried Plum Peas with Potato Shreds

1. Ingredients: plum peas, potatoes, garlic.

2. Wash the plum beans, remove the tendons on both sides and then shred them, shred potatoes and rinse them with water (to rinse off some of the starch), mince garlic, and dice dried peppers.

3. Bring water to a boil in a saucepan, and blanch the plum peas.

4. Add edible oil to the wok, add chopped garlic and sauté until fragrant.

5. Add dried chili and saute until fragrant.

6. Add potato shreds and stir fry.

7. Add pepper powder and stir fry.

8. Add light soy sauce and continue to stir fry.

9. When the potatoes are ripe, add the plum bean shreds.

10. Add salt, stir fry evenly, turn off the heat and take out.

11. Slightly spicy taste, salty and delicious.

Tips:

Do not cut the plum peas too finely. After blanching them in boiling water, put them in a basin of cold water to keep the color green. After shredded potatoes, they can be soaked in cold water to remove some starch. When they are fried, they will not stick to the pan.
