Fried Pork with Yuba

Add a spoonful of salt and some warm water to a large basin, soak the yuba for half an hour.

Slice the lean meat, add some pepper, cornstarch, light soy sauce, and peanut oil, and marinate for ten minutes.

The soaked yuba squeezed out the water and cut into about 4cm sections.

Ginger slices, garlic slices, small red peppers into sections, green onions into sections.

Heat oil in the pot, stir fry the meat slices until they are ripe, set aside.

Put the sliced ginger and garlic into a pot and sauté until fragrant.

Add the yuba, add a little water and stir fry for a few times.

Add pork slices and red pepper shreds and stir fry a few times, then add two spoons of light soy sauce and stir fry for color.

Finally, add the green onion, add a little salt and stir-fry the chicken essence to taste.

Tips:
1. After slicing the lean meat, add the ingredients and marinate for ten minutes. Add pepper and peanut oil to increase the flavor and tenderness. It should not be too long in the pan.
2. Soaking yuba with boiling water is easy to rot. Soaking in cold water takes too long. It is recommended to add some salt with warm water so that the yuba will soak easily and evenly.
