Salted fish and chicken fried rice is one of the classic Cantonese (Hong Kong-style) fried rice. Whether it is a high-end Cantonese restaurant or a civilian Hong Kong-style tea restaurant, the salted fish and chicken fried rice will definitely appear in the recipe. I have fried it at home several times before, and it always feels a little different from the restaurant. Later, after a chef gave me advice, I found out that the secret is to add a kind of sauce-fish sauce. The fried rice with salted fish and chicken cubes with fish sauce is indeed more fragrant!

Fried Rice with Salted Fish and Chicken

1. Put oil in a pot and sauté ginger paste, then add salted fish and stir fry until fragrant

2. Then add the marinated chicken and stir fry until the chicken is 8 minutes cooked

3. Pour the overnight rice and stir fry until the rice is scattered and heated evenly

4. Stir in fish sauce, add a little light soy sauce and chicken powder, and stir-fry evenly

5. Sprinkle a little cooking wine and stir fry evenly

6. Finally, add the chopped green onion and stir-fry evenly.
