Fried Rice with Xo Sauce

Take a bowl slightly larger than the rice bowl, knock an egg, add a little salt, and stir well. Because XO sauce is salty, a little bit of salt is good.

Pour in the leftover rice, use a rice spoon to squeeze it, and try to make every grain of rice stick to the egg liquid.

Wash the carrots, celery, and shallots and chop them.

Open a small box of abalone hot sauce, and make preparations so that you will not be in a hurry.

Heat the pan, pour in a proper amount of oil, turn the pan a few times, let the oil run down the pan, add the diced carrots and stir-fry for one minute.

Tips:
1. It is best to use leftover rice from the previous day for fried rice, so that it is easy to fry.
2. The side dishes are as you like.
3. The rice does not need to be soaked in the egg liquid, this is just for the golden yellow to look good.
