Fried Scallion Pancake
1.
Put the green onion leaves under cold oil (white onion is used for scallion, I planted germinated onion, which is a bit old, and the green onion leaves are thicker and a bit old, not suitable for scallion).
2.
Slowly fry on low heat until the green onion leaves are browned.
3.
Discard the green onion leaves.
4.
Pour hot oil on the flour and stir quickly.
5.
This is whipped flour, and these little bumps will appear.
6.
Blanch about 1/3 of the flour in boiling water and let cool.
7.
Add yeast, baking soda, salt, and mix well.
8.
Add a little bit of cold water to make a slightly firm dough.
9.
Dip your hands in cold water.
10.
Then go to knead the dough, just like this a little bit of water on your hands knead into the dough. Because the flour is poured with scallion oil, you can smell a clear scallion scent during the kneading process.
11.
The final kneaded dough is smooth and soft, but a little harder than the dough for making dough sticks, so put it in the refrigerator to ferment overnight.
12.
This is a good dough, not as good as the dough I made before. Because I made this kind of dough for the first time, I don't know if it is because the flour has been blanched. At this time, I was worried that the dough would not expand when I fry it later. I realized that the worry was unnecessary when I was actually frying it.
13.
Exhaust the dough and rub the strips.
14.
Divide into small portions.
15.
Round one by one.
16.
Brush the surface with some oil.
17.
Roll the dough into small round cakes, poke a hole in the middle, a bit like copper coins.
18.
Everything is done and relax for a few minutes.
19.
Fill the pot with oil, heat it to about 40% heat, place the small cakes, roll the side with a rolling pin down, and place the cake embryos. It is said that this is more fluffy. Slowly fried on medium and small fires.
20.
It can be seen that the dough has expanded greatly, so my previous worries are unnecessary.
21.
Turn it over from time to time, and just fry it until golden on both sides.
22.
Take it out, use kitchen paper to absorb the excess oil and eat it. The green onion has a strong fragrance and tastes better than fried dough sticks.
