Fried Shrimp Balls

Prepare chilled shrimp and steamed buns.

Wash the fatty meat with warm water, wash the water chestnut, green onion ginger, and mince the onion ginger.

Cut the steamed buns into small cubes of 0.5 cm square.

Peel the chilled shrimp, remove the head and tail, kick off the shrimp string, wash, and place it on the chopping board with a knife to flatten and chop. Peel and mince water chestnuts. Chop the fat into stuffing.

Place the prawn stuffing, fatty pork stuffing, chopped water chestnuts and green onion ginger together in a container, and add the cooking wine.

Put salt.

Add pepper and stir vigorously in the same direction.

Take an appropriate amount of minced meat and squeeze into balls.

Put it in the bun.

Roll the balls evenly on the steamed buns.

Dip the small buns around the balls, squeeze it lightly with your hands to make them firmer.

Shrimp balls wrapped in steamed buns.

Make shrimp balls one by one.

Put the net pot on the fire, add refined oil, and when it's 50% hot, use bamboo chopsticks to hold the shrimp balls and put them in the pot to fry.

Stir gently with a colander during frying.

Fry on medium heat until golden in color, remove when cooked. It can be dipped in salt and pepper when it is eaten, or it can be eaten as it is.
