Stir-fried Shrimp with Asparagus

Prepare the ingredients, clean them separately and set aside, take the chilled shrimp out of the refrigerator in advance and thaw it. If you can purchase fresh shrimp, it will taste better;

After the shrimp is thawed, remove the shrimp heads, shells, and shrimp threads and clean them;

Cut the asparagus diagonally into 3cm~5cm long sections, and cut the carrots into long strips at will. Remove the older part of the bottom of the asparagus before cutting;

After the prawns are cleaned, cut a knife from the back of the prawns. Be careful not to cut into sections. Then add freshly ground black pepper, a few drops of rice wine juice, and a few drops of salt to a small bowl. Stir well. Pickling in advance can help. Fishy, the fried shrimp also adds more flavor. Rice wine juice can also be replaced with cooking wine;

Turn on the gas stove, pour an appropriate amount of water into the pot, wait for the water to boil, add the asparagus and carrots to blanch water, add a few drops of edible oil and a little salt during the blanching process to keep the food bright green;

Blanch the asparagus and carrots for about half a minute and then remove them. Put them in a bowl of cold water immediately. Too cold water can make the asparagus and carrots taste crisper;

Drain the blanched asparagus and carrots;

Pour an appropriate amount of cooking oil into a clean pot, wait for the oil to heat up, then add in small pieces of pickled peppers, and stir-fry slowly on low heat. Pickled peppers are marinated on their own, and have no spicy taste. They are mainly for seasoning, and you can leave them without them;

After smelling the scent of pickled peppers, add the marinated shrimps and stir-fry quickly over high heat;

Stir-fry for about 10 seconds, the surface of the shrimp will slightly change color;

Add blanched asparagus and carrots, then add a little salt and stir fry together;

Stir-fry evenly, turn off the heat and serve.
Tips:
1. It is recommended to choose asparagus which is relatively fresh and tender, which will become astringent and bitter when it is old;
2. The shrimp can be marinated in advance to remove the fishy and keep the umami taste;
3. It is recommended to stir-fry the shrimps quickly on high fire after they are put into the pot. The time for stir-frying should not be too long, and they will not taste tender after being fried.
