Fried Yellow Croaker

Wash all materials or prepare them.

Scrape the yellow croaker, remove the gills, remove the internal organs, and clean it. Then cut the fish with a knife; knock the eggs into a bowl and beat them evenly.

Season the yellow croaker with a little salt, pepper, Shao wine, and chicken essence. Dip the flour and mix the egg liquid. Put it in hot oil and fry until golden brown on both sides.

Leave a little oil in the original pot, use green onion and ginger to cook, add the remaining Shao wine, vinegar, sugar, salt and some soup to a boil, then put the yellow croaker in it and cook it over a low heat until the soup is thick. Sprinkle with coriander, drizzle with a little hot oil, and it's ready to be served.
