One piece of bittern tofu and set aside. Wipe off excess water and set aside.

Prepare the seasoning for the brine tofu.

Cut the tofu into pieces of 7-8 cm. I cut this piece of tofu into four pieces.

Put about 80 grams of oil into the frying pan, and put the tofu into deep fry at 60% of the oil temperature.

Fry until golden on both sides.

Remove the excess oil from the tofu, put the tofu back into the pot, add salt, shallots, sliced ginger, pepper, aniseed, bay leaves, cumin, cinnamon, sugar, light soy sauce and dark soy sauce, and simmer in water at low heat. Those who like to eat marinated eggs can add a piece of marinade after boiling.

Tips:
1. Tofu must get rid of the moisture on the surface, after all, the oil spills out.
2. Brine tofu must be cooked slowly over medium and low heat to make the tofu flavorful.
3. For marinated eggs, boil the eggs before making tofu and stop the fire. When the tofu is fried and put in the water, remove the eggs and rinse with cold water.
