Live shrimps have their heads and shells removed, their tails left, and the shrimp threads (intestines) removed

Boil a little water, then twist the shrimp into a spiral shape. The shrimp tail will be blanched until it is half cooked. This action is only for the shrimp tail to stand up.

Take 4 eggs (actually 3.5 eggs, one egg white is used for tender shrimp), then add 1 spoon of seasoning salt, and mix with two small bowls of cold boiled water (the ratio of egg to water is 1:2) and beat well. Skim the bubbles. Put cold water in the pot and boil over medium and low heat and start steaming the eggs.
