Tips:
1. The peppercorns in the blanching water can also be left alone, my main purpose is to increase the fragrance of the fish;
2. When blanching the diced fish, it must be fast, and the fish should be removed when the color changes, otherwise the fish will be easily scattered;
3. When frying the diced fish, move quickly and lightly, and don't let the fish loose.
