Ingredients

Ginger Lotus Root Slices

1. Wash lotus root, peel off both ends, cut into thin slices

2. Put water in a pot and boil, add lotus root slices and blanch for 1 minute

3. Remove and rinse twice in cold boiling water, remove and drain the water

4. Wash ginger, peeled and minced

5. Put minced ginger in a bowl, pour other ingredients except green onion leaves and goji berry

6. Pour in the lotus root slices and mix well

7. Put chopped green onion leaves and goji berries on the surface for decoration

Tips:

The lotus root should be blanched in boiling water to prevent oxidation. Too much cold water can wash away the excess starch in the lotus root and make it more refreshing.
