Ginger Soda

Wash ginger and slice it (the thinner the better)

Pour in brown sugar, cloves and cinnamon sticks (you can put them in a tea bag) and put them in the refrigerator under stirring for more than 2 hours or one night (the picture shows so much juicy water in one night)

Heat the pot, pour in the granulated sugar and two spoons of water, stir it on low heat and start to turn into the same color as the picture. Add 200ml of water and stir a little bit. Note that there will be a violent reaction when adding water, so you don't get burned.

Probably this color is almost the same. Add pickled ginger and increase the heat to boil, then change to low heat and cook for 20-30 minutes.

Add honey and squeeze lemon juice to a pot, boil, filter, and transfer to a suitable container, refrigerate

Adding carbonated water or ice water is its own unique feature.
