Golden Needle Mushrooms

Prepare the ingredients first.

Remove the root part of Flammulina velutipes and wash it. Separate one by one.

Put it in a steamer and steam for 2 minutes after the water is boiled.

Wash twice with cold boiled water to cool. Then grab it with your hands.

Mix the cold sauce: 1 spoon each of oyster sauce, sugar, and vinegar, 2 spoons each of sesame oil, light soy sauce, 4 spoons of chili oil, add minced garlic, cooked sesame seeds, and millet pepper, and stir well.

Wash the cucumbers and cut them into thin slices with a scraper. Use a wide knife to make two strokes. Finely chop garlic, mince coriander and chives.

Tips:
The cold sauce of this ratio is mixed and tasted. It is very flavorful. It can be used as a universal juice for cold dishes. If you don't like it too spicy, you can soak the millet pepper in rice vinegar for 2 minutes. If you want less oil, you can put less juice and add less salt to taste.
