Ingredients are prepared. Note that the tofu used is northern tofu, which is hard tofu, which is too soft (although the finished product is soft and tender, I thought it was lactone tofu)

Sift all kinds of powder, mix and mix well (I use it if I haven’t sifted it myself)

Japanese-style shichimi noodles are small bottles of the kind sold in supermarkets. The name is shichimi noodles. It is a bit spicy because it contains red chili powder. If you don’t eat spicy food, you can use salt and pepper powder instead, it tastes the same, but the finished skin is not as beautiful as there are no red particles in it.

Dry the water on the surface of the tofu

Water will come out after the tofu is cut, so don't leave it for too long. It’s best to cut the tofu after cooking the oil

Put it in the powder and gently toss the basin

Cover the tofu with flour. If there are any areas that are not sticky, use chopsticks to gently turn the tofu over. It must be light, or the tofu will break. The sticking action must be fast, otherwise the skin of the tofu will not be crispy when the tofu is out of the water

Shake it in a colander before putting it in the frying pan to remove excess powder

Put the tofu into the frying pan to fry the whole scalp, and the oil temperature is about 150 degrees at this time. Fry for 45 seconds, the surface is golden yellow, and fry for another 30 seconds.

Tips:
You can leave the baking soda, and you must not put too much, rather than too much, otherwise it will be bitter!
Tofu is too prone to water, try to dry a little bit before breading, breading should be fast, and put it in the pan as soon as possible, so that the skin will be crispy when the skin becomes crispy.
The finished product is best to eat while it is hot, so it is best to cook it and eat it as the last dish before the meal.
Fresh frying is the best way to get the color. After one wave of oil is fried and then the second wave is not good, so try to cook it in one pot instead of batching.
